Instructions
- Prep your peaches: Dice the peaches into small bite-sized chunks. Peeling is optional—if the skins are thin, leave them on.
- Chop the rest: Finely dice red onion, jalapeño, bell pepper, cilantro, and garlic if using.
- Mix it up: Toss everything into a bowl. Add lime juice and salt.
- Stir and taste: Adjust salt and lime to your liking. Let sit for 10 minutes to let flavors meld.
- Serve: Enjoy with tortilla chips or spoon over grilled meats, tacos, or eggs.
Notes
Use white onion instead of red for a milder bite.
