Spicy Peach Salsa with Jalapeño and Lime

  • 3 ripe peaches, diced (peeled if desired)
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced (or leave seeds for more heat)
  • 1/2 red bell pepper, finely diced
  • Juice of 1 lime
  • Handful of fresh cilantro, chopped
  • Salt to taste
  • Optional: 1 small garlic clove, minced

Instructions

  1. Prep your peaches: Dice the peaches into small bite-sized chunks. Peeling is optional—if the skins are thin, leave them on.
  2. Chop the rest: Finely dice red onion, jalapeño, bell pepper, cilantro, and garlic if using.
  3. Mix it up: Toss everything into a bowl. Add lime juice and salt.
  4. Stir and taste: Adjust salt and lime to your liking. Let sit for 10 minutes to let flavors meld.
  5. Serve: Enjoy with tortilla chips or spoon over grilled meats, tacos, or eggs.

Notes

Use white onion instead of red for a milder bite.

Add a chopped avocado for creaminess.

Mix in diced mango or pineapple for tropical vibes.

Make it spicier with serrano peppers.

Use lemon instead of lime if that’s what you’ve got.
