Ingredients

1 cup natural peanut butter (creamy or crunchy)

½ cup honey or maple syrup

2 ½ cups old-fashioned rolled oats

½ tsp vanilla extract

¼ tsp salt

Optional mix-ins: mini chocolate chips, chia seeds, shredded coconut
Instructions
Step 1: Warm the Wet Ingredients
In a medium saucepan over low heat, combine:

Peanut butter

Honey
Stir until smooth and just warm enough to blend easily. Do not boil.
Step 2: Add Vanilla & Salt
Remove from heat and stir in:

Vanilla extract

Salt
Step 3: Mix in Oats
Add rolled oats to the peanut butter mixture. Stir until well combined and evenly coated.
Optional: Fold in mini chocolate chips or other mix-ins once the mixture cools slightly (so they don’t melt).
Step 4: Press into Pan
Line an 8×8-inch baking dish with parchment paper. Press the mixture firmly into the pan using a spatula or your hands. The firmer you press, the better the bars will hold together.
Step 5: Chill & Slice
Refrigerate for at least 2 hours, or until firm. Lift out of the pan, slice into 8 bars, and enjoy!
