Decadent Chocolate Pecan Pie with Rich Fudge Filling


Ingredients

For the Pie Crust (or use store-bought):

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1/2 cup cold unsalted butter, cubed

  • 35 tablespoons ice water

For the Filling:

  • 1 cup light corn syrup

  • 1/2 cup packed dark brown sugar

  • 3 large eggs

  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1 1/2 cups semisweet or bittersweet chocolate chips

  • 1 1/2 cups pecan halves or chopped pecans (toasted preferred)


Instructions

Make the Crust:

  1. In a bowl, mix flour and salt. Cut in the cold butter until coarse crumbs form.

  2. Add ice water, 1 tablespoon at a time, mixing just until dough comes together.

  3. Form into a disk, wrap in plastic, and chill for at least 1 hour.

  4. Roll out on floured surface and fit into a 9-inch pie dish. Trim and crimp edges. Chill again while making filling.

Make the Filling:

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth.

  3. Stir in the chocolate chips and pecans.

  4. Pour the mixture into the prepared pie crust.

Bake:

 

  1. Bake for 50–60 minutes, or until the center is set and the top is puffed and cracked.

  2. Cool completely before slicing. The pie will continue to firm up as it cools.
